  • SUPPER ON A SUPER COLD NIGHT!!!

    I decided to use the dark meat & giblet gravy from Thanksgiving to make a pot pie for supper.  But since Mom doesn't like giblet gravy, I made up a nice concoction  to make a second pot pie with some of the white turkey meat.  The two pies turned out beautifully, and they both received rave reviews from those who ate it.  Here is the before supper picture.

    I am so glad that we are inside of our nice warm house.  It is 19 degrees (but with a chill factor of 4 degrees. It snowed most of  the day, and we are supposed to get more overnight.  I am always concerned for our older son on these cold nights, especially when it is nasty out, too. He delivers pizza.

    Due to our mobility issues, we plan to stay home from church tomorrow morning. {Mom has to walk with a walker; Mike is totally blind, but has very firm footing; I have post-polio, and walk with braces (& do not do well in ice and snow) ... though I do very well getting around otherwise. :-)

    However, my brother will pick us up so that we can all go to our church's special Christmas program (one showing at 2 p.m. & one at 6 p.m.) He will let the three of us out at the front porch of our church.  It will be nice to go together all four of us.     • I live in Springfield, Ohio, which is just off of I-70, between Dayton and Columbus.

  • It's cold here too. 18 degrees this morning. I'd like to stay home and bake pot pies! Mu Honey loves pot pies. I'll have to find a recipe. Hope you have a wonderful Sunday!

    • Thank you, Miriam. I hope you are having a wonderful Sunday as well! I checked a quiche recipe for how high and how long to bake; otherwise, I just made up the recipe
      as I went along. :-) From the look of how much is left after my son got off work in the early morning, I shall need to make pot pies again in the future! ;-)

    • I try to always be careful. It will help greatly that my brother will be picking us up, and letting us off at the church entrance, and then after the program he will bring the car around to pick us up again. Do you have much snow in TX where you are? I had heard that you had snow in at least some parts of TX.

  • Those pies look very yummy Joyce. I didn't know that Mike has problem with his vision. You say he cannot see. Does he have Macular Degeneration? Please be careful yourself. My younger sister (in Florida) had polio as a child but did very well with physical therapy. Now she has post polio syndrome and walks with a walker when she has to go out anywhere. Blessings to you.

    • Thanks, Zakiah. When I met Mike, he was legally blind. He was born with retinitis pigmentosa. Over the years, he gradually lost all of his vision, including his light perception. Sometime I will write a blog about his RP. I do very well with all of my polio/post-polio problems. I have very much to be thankful for in this regard. Over the years, God has been teaching me to be thankful in all situations, and to adapt and to deal with pain well. Truly I'm blessed! .... including having special friends both off and on the internet -- like you. :-) ~ Carolyn

  • Brrrr! I shivered just thinking about your weather! We had a big, bad, storm blow through Thursday and Friday, but it was mostly rain and high winds. We had to run errands, and the wind was blowing the rain horizontally! My jeans were wet clear up to my knees! Your pot pies sound (and look!) wonderful. I am sure the Christmas program was lovely.

    • Your description of your weather is pretty vivid... I can picture it (including the wet jeans) ;-) Don't you get pretty cold weather where you are?

  • I am sitting here laughing at your question... is it cold where I am? ... I haven't set foot outside to find out. LOL It was gray, overcast, and rainy yesterday... it is gray, rainy, and overcast today.... reading how cold it is for everyone else out there I don't even want to open my door. lol

  • Special plans for Sunday? Stay in and stay warm. lol I listen to church services on the radio most Sunday mornings. I'll probably pop a movie in the DVD player to watch later. :-)
